As restaurants inch towards returning to pre-pandemic levels, cheese volume continues to be a strong driver within the dairy industry. In 2020 alone, total cheese consumption in food service topped 4.66 billion pounds, accounting for 38% of total domestic cheese use. Both full-service and quick-service restaurants made up 80% of the total food service volume in 2020, which is up 7% when compared to 2018. Mozzarella led the way, accounting for over 25% within food service, the popular choice for pizza blends.
